Thanks to the Paleo Effect I found something quite scrumptious. I actually enjoyed this more than my former go to dish, proving that healthy food can be just as good. I suggest serving this up during your next weekend brunch or maybe for a 'breakfast for supper' night. You will be glad you did!

Paleo Breakfast Casserole
1 & 1/2 - 2 sweet potatoes, grated
4-7 links of turkey sausage (I used al fresco's country style)
4 eggs
1/2 cup of egg whites
1 sweet onion, chopped
1/2 cup of coconut milk (careful not to buy one that has too much added sugar)
Olive oil
1/4 teaspoon of salt
1/4 teaspoon of pepper
Makes 6-8 servings
Preheat oven to 350 degrees. Chop onion and turkey sausage. I cut up slices of the turkey sausage links and chopped them in the food processor to break them up. Heat skillet and add olive oil. Saute onions and turkey sausage with a pinch of salt and pepper until onions are translucent and sausage is cooked.
While the onions and sausage are cooking. Peel and grate your sweet potatoes. Grease your baking dish and add the grated sweet potatoes, creating the first layer. Then add the onion and sausage to make the second layer.
Finally, whisk eggs, coconut milk, and egg whites with salt and pepper. Pour mixture over the other two layers. Bake dish for 45 minutes.
I enjoyed my serving with some sweet Florida strawberries. Delish.
